What is the difference between a hen and a tom turkey?
Many people say hen is better, but really, it is a matter of taste. It comes down to size. Turkeys of the same age, approximately, over 15 pounds are Toms and under 15 pounds are hens.
Order approximately 1lb of raw turkey for each guest to allow for shrinking during cooking and the weight of the bones/carcass. More if you want leftovers.
